In our tests, this copper core scored tops for cook time and cleanability. Copper is valued more than stainless steel due to high demand and limited supply. They're usually handcrafted and hammered, which ups their price point. Very few professional kitchens have copper pans due to their price tag; if used, they're usually at fine-dining establishments, since a single pot typically runs at least $100. One common question that comes up when shopping for copper pots and pans: to go bare or lined? Because of its luxe look, copper is often used on the exterior of the cookware, "either as a thin decorative layer or as a thicker, functional layer, particularly on the bottom of the pan," says Harris.

Caring for copper is as simple as using wooden utensils when cooking, so as not to scratch the lining; not using too much heat when cooking; and rubbing it down with a little acid every now and again.


For the most part, the metals used to line copper cookware are very strong and corrosion-resistant. But if you have tin-lined copper, no matter how well you take care of it, it will wear off over time. If you do see damage to the tin lining, you can always get your copper pots and pans re-tinned when necessary.


We looked into popular types of cookware and listed what you should know, based on available data, clinical trials, and user reviews, to make an informed choice about the cookware you use to prepare food for your family.


Copper cookware conducts heat well and contains copper, which similar to iron has nutritional value for people. Usually, this type of pan has a base made of another metal like stainless steel, with a copper coating over it.


For pots and pans to be compatible with an induction cooktop they must be made of a magnetic material: either iron or iron-based, such as steel. Induction heating works by exciting the iron atoms in cookware, so there needs to be enough iron in your pots and pans for the heat to happen.


Cookware made only from glass (including Pyrex), aluminum or copper will not work on an induction hob. However, some cookware manufacturers offer aluminum or copper pans with a magnetized base that is specifically designed for induction cooktops.

Copper-based pans will not work on an induction cooktop as they are not ferromagnetic. A good option is to clad it with a ferromagnetic metal like stainless steel so the magnetic conduction can take place.

Simply soak a sponge with Worcestershire sauce and rub the sponge over the surface of your dirty copper pots and pans and let the sauce dwell (I love the word dwell because it means less work for me) on the copper for a measly 1 or 2 minutes. Then wipe it off and rinse your cookware.


Next, shake the solution until the salt dissolves completely. Spray your copper cookware liberally with the solution and let it dwell for ten to twelve minutes. Finally, you can give the surface a good scrub using a sponge before you rinse and dry the copperware.
