Directions





  • In a large pot over medium heat, melt the butter and cook the leeks until soft, stirring occasionally, for about 15 minutes.



  • Add the chicken broth, potatoes, bay leaves, salt, and pepper and bring to a boil. Reduce the heat and simmer until the potatoes are tender, for about 20 minutes.



  • Stir in the chicken, cream, parsley, and prunes and cook until heated through, for about 10 minutes.



  • Discard the bay leaves and ladle the soup into bowls. Enjoy with some crusty bread or crackers.




This recipe makes about 6 servings of creamy cocky leeky soup. You can store the leftovers in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months. To reheat, thaw the soup in the refrigerator overnight and then warm it up on the stove or in the microwave.
