Creamy Cocky Leeky Soup Recipe Rutabegorz

Creamy Cocky Leeky Soup Recipe Rutabegorz

If you are looking for a hearty and delicious soup to warm you up on a cold day, look no further than creamy cocky leeky soup. This soup is a variation of the traditional Scottish cock-a-leekie soup, which is made with chicken, leeks, barley, and prunes. The creamy version adds some cream and potatoes to make it more rich and satisfying. Rutabegorz is a restaurant chain in California that serves this soup as one of their specialties. Here is how you can make it at home with simple ingredients.

Ingredients

  • 4 tablespoons of butter

  • 4 leeks, white and light green parts only, sliced

  • 4 cups of chicken broth

  • 4 medium potatoes, peeled and diced

  • 2 bay leaves

  • Salt and pepper, to taste

  • 2 cups of cooked chicken, shredded or chopped

  • 1/4 cup of heavy cream

  • 1/4 cup of chopped fresh parsley

  • 12 pitted prunes, chopped

Directions

  • In a large pot over medium heat, melt the butter and cook the leeks until soft, stirring occasionally, for about 15 minutes.

  • Add the chicken broth, potatoes, bay leaves, salt, and pepper and bring to a boil. Reduce the heat and simmer until the potatoes are tender, for about 20 minutes.

  • Stir in the chicken, cream, parsley, and prunes and cook until heated through, for about 10 minutes.

  • Discard the bay leaves and ladle the soup into bowls. Enjoy with some crusty bread or crackers.

This recipe makes about 6 servings of creamy cocky leeky soup. You can store the leftovers in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months. To reheat, thaw the soup in the refrigerator overnight and then warm it up on the stove or in the microwave.
